In the peace and quiet of the cellar…
… a slow vinification linked to each “Climat” and vintage.
Our wines, from “Aligoté” to “Premier Cru”, all benefit from the same respectful attention, with as least intervention as possible throughout the winemaking process.
Our job is to reveal the soul of each “Climat” and each plot.
Our wines are regularly analysed and monitored by an independent oenology laboratory. The various operations are carried out gently, using gravity as much as possible.
In order to promote harmonious ageing, we prefer a long maturing period.
We use French oak barrels. These barrels are aged “from 2 to 5 wines” (2 to 5 years). They are renewed every year with the purchase of new barrels.
Bottling takes place after a period of 12 to 16 months in wood, depending on the appellation, followed by a few weeks in vats.
In this way, we develop a diverse range of aromas and flavours.
The village of Puligny was built on the water table that feeds its sources and wells. As a result, our semi-underground cellar benefits from a high level of humidity, making it ideal for maturing in barrels and preserving corks.
